Bread Pudding Recipes

Here are some of mine;

Peach Bread Pudding

Notes: I like to break the bread into chunks and dry out in 200 degree oven for about an hour.

1 loaf Stale French Bread, See note
1 quart milk, scalded
3 large eggs
2 cups sugar
2 tablespoons vanilla
3 tablespoons butter
1 can peaches in heavy syrup
1/2 cup pecans

1. Crumble french bread and soak in scalded milk. Add eggs, sugar, vanilla, peaches, and pecans.

2. Melt butter in casserole dish and pour in bread mixture.

3. Bake till firm. (approx. 40 Min. at 350)

4. To serve top with whiskey sauce


_________________________________________________White Chocolate Bread Pudding

Notes: For those on a diet, please substitute water for this dish.

8 large egg yolks
2 large eggs
1/2 cup sugar
1 tablespoon vanilla
3 cups whipping cream
1 cup milk
1 pinch salt
10 ounces white chocolate
1 loaf french bread, sliced in 1/4" pieces and baked
sauces
8 ounces white chocolate, melted
3 ounces heavy cream

1. Melt white chocolate in double boiler. In large bowl combine yolks, eggs, sugar, vanilla, whipping cream, milk and salt. Heat over double boiler and stir in chocolate.





2. In cups, place 2 slices of bread. Pour mixture into cups and let settle. Top with mixture to fill cups. Place cups in baking pan and fill pan with water to about halfway up the side of the cups. Cover with foil and bake one hour at 275 degrees. Remove foil and bake for 15 more min.. Loosen and invert to remove from cup. Pour sauce over pudding and garnish with shaved white chocolate.

Sauces


Whiskey Sauce

Notes: Southern Comfort works really well for this sauce

1 cup sugar
1 stick butter
1 each egg, beaten
2 ounces bourbon whiskey, see note

Cream sugar and butter and cook in double boiler untill sugar dissolves. Add egg very slowly while whisking. cool and add bourbon.

Chantilly Cream Sauce

2/3 cup heavy cream
1 teaspoon vanilla extract
1 teaspoon brandy
1 teaspoon Grand Marnier
1/4 cup sugar
2 tablespoons sour cream

1. Using cold med. size bowl and beaters, mix cream, vanilla, brandy, and Grand Marnier on med. speed for 1 minute.

2. Add sugar and sour cream and beat on med. till soft peaks form....don't overbeat or it will become grainy.

I've made this one a bunch of times. People always ask for it:

Ingredients

6 croissants, preferably stale, sliced horizontally
1 cup raisins
Directions
Preheat the oven to 350 degrees F.

In a medium bowl, whisk together the whole eggs, egg yolks, half-and-half, sugar, and vanilla. Set the custard mixture aside. Slice the croissants in half horizontally. In a 10 by 15 by 2 1/2-inch oval baking dish, distribute the bottoms of the sliced croissants, then add the raisins, then the tops of the croissants (brown side up), being sure the raisins are between the layers of croissants or they will burn while baking. Pour the custard over the croissants and allow to soak for 10 minutes, pressing down gently.

Place the pan in a larger one filled with 1-inch of hot water. Cover the larger pan with aluminum foil, tenting the foil so it doesn't touch the pudding. Cut a few holes in the foil to allow steam to escape. Bake for 45 minutes. Uncover and bake for 40 to 45 more minutes or until the pudding puffs up and the custard is set. Remove from the oven and cool slightly. Serve warm or at room temperature.

I've seen it made out of any stale bread products..even doughnuts

that one looked a bit much for me. I'm no stranger to the love of the sweet stuff, but that one send me over the top.

French bread is best, but the croissant one is a nice change and suprises most people

Made one out of a Randazzo's king cake this year. You got to up the liquid content to deal with the denser bread. Tasted exactly like you would think it would.

Tim.....White Chocolate Bread Pudding is my favorite sinful food of all time. Have you ever had the WC bread pudding from the Grapevine in Donaldsonville or Cafe Des Amis in Breaux Bridge? I have searched for years for a recipe that compares to one of the bread puddings i meantioned above but to no avail; guess i will have to give yours a shot.

I have not eaten at either of those places(but I do have them on my list...thanks)....but this is one rich dish....I like it a lot. Give it a shot and let me know what it seems to be missing.
