I don't have suggestion for the Capital, but I picked up some smoked boudin from Bergeron's in Port Allen a few days ago and it really is good. I've had it a number of times.

I find their andouille to be pretty good, also. It's not heavy in the smoked department, so I'm going to try in gumbo. I don't like the smoke in gumbo to be too heavy.

Their smoked chicken wings were very good also. They were pretty big meaty wings.

The jerky is good, also, though I didn't pick any up on this stop.

Years ago, the town of Broussard used to have the "International Boudin Festival" and named itself the Boudin Capital of the World. Funny, but I cant think of a single boudin establishment in that town?

Rep. Ortego said Scott is in the process of organizing a Boudin Festival. Scott is right, but Mowata is the real answer.

Headed to Lafayette tomorrow and getting some from Johnson's Boucaniere, unless anyone's got a better idea

Have you tried the smoked boudin at Bergeron's? I've never had Johnson's, so I can't compare the two.

Great boudin. The fresh sausage in incredible too, but something about paying $6.50 a pound doesnt sit well with me.

I stopped at Billy Ray's in Opelousas on the way home from Dallas yesterday....I thought it was great. Grabbed a few pounds of cooked spicy...and a few baseball-sized boudin balls for the ride.

I really like it as well. I wouldn't hesitate to send somebody there for Boudin and Jerkey.

Builleaud's has decent boudin and chops is ok.

I havent been to many places north o fI-10 recently though (including best stop)

If you vac seal the boudin, it will keep for a long time in the freezer. I haven't really timed it, but I've frozen it for months and months and it's fine. I prefer that it not be frozen, but for frozen, it's fine.

thanks--my wife brought some back from mandeville and i know i'm not going to be able to eat it all over the weekend but i want to keep it from going bad.
