My bad. I read 'breasts' instead of 'thighs.' I use boneless skinless thighs for chicken salad.
For thighs, I drizzle some terryaki and hot sauce in a skillet, add the thighs and cover on low heat. Turn once and leave cover off to reduce sauce. Serve with any side dish you like.

Put some yellow rice and sliced carrots at the bottom of a dutch oven with the required amount of water to cook the rice. Place the thighs on top with salt and some sort of flavored pepper. cook in the oven for a couple of hours at about 325.

P90x Lemon Garlic Chicken
Healthy and delicious.
2 Tablespoons Molasses
2 teaspoons worcestershire Sauce
1/4 cup lemon juice
4 cloves garlic
Mix together and spread on top of chicken.
Let sit for 1 hour.
Heat oven to 400 degrees.
Salt and pepper chicken.
Put chicken in oven for 20 minutes, basting every now and then. I usually baste every 10 minutes.
After done basting, cook for additional 20 minutes.
Enjoy!

Brown the meat & ground into your protein powder. A guy like you needs roughly 600 grams per day.

I like them better than breasts cause they don't dry out as much.

I think it was Darla that posted a Thai Red Curry recipe with chicken thighs. These things come out tender as hell. I think my choice of the ingredients were a little different but this is easy and healthy
6-8 boneless skinless thighs trimmed of excess fat
1 bottle Thai Red Curry Paste (I buy this)
2 cups Silk unsweetened coconut milk
In a deep pan mix paste and milk and heat to a simmer. Salt and pepper thighs. Add thighs and cover (keep to a simmer). They come out tender and delicious.
Serve over egg noodles or brown rice. Like to serve sides of sauteed mixed veggies as well (carrots, onions, garlic and zucchini)

Spicy honey chicken thighs
Ingredients
• 2 teaspoons garlic powder
• 2 teaspoons chili powder
• 1 teaspoon salt
• 1 teaspoon ground cumin
• 1 teaspoon paprika

• 8 skinless, boneless chicken thighs
• Cooking spray
• 6 tablespoons honey
• 2 teaspoons cider vinegar
Preparation
• Preheat broiler.
• Combine first 6 ingredients in a large bowl. Add chicken to bowl; toss to coat. Place chicken on a broiler pan coated with cooking spray. Broil chicken 5 minutes on each side.
• Combine honey and vinegar in a small bowl, stirring well. Remove chicken from oven; brush 1/4 cup honey mixture on chicken.
