You have to learn how to negotiate at Popeyes.

Me: "Two piece white dinner with red beans and rice".
Popeyes: "We don't have any breasts right now". "Fifteen minutes".
Me:" I'll take spicy, doesn't matter".
Popeyes: "How about a thigh and two wings"?

This girl is management material.

But we're lucky to have Leader's Chicken in Ascension Parish which blows all the others out the water.

Leaders suck so bad, it gets soggy quick, usually overcooked and flavorless. Maybe the one in Gonzales is better than the one in St Amant.

Don't ever remember Bojangles being in Louisiana.

Lafayette had a Mrs. Winner's in the 80's, it didn't last too long.

Bojangles is ok but their whole premise of being 'Cajun' IMO is what is wrong. They likely jumped on the moniker back in the 80s I would guess. I would wager that the vast majority of BJ customers have never eaten boudin, crawfish, or cracklings.
