I vaguely remember as a kid being told there was a way to pull off each leg and the meat would come out with it. I know I've had that happen on occasion but it's rare.
Hard to explain it on here but I'll try. Once you get to the point of it looking like a gumbo crab with the legs on, break it in half. Use your thumbs to separate the top from the bottom. This will expose the meat inside the chamber attached to the legs. Gently pull on the leg and hopefully the meat will come out with it.
Love crabs but are a pain to clean.

do your normal bit, but almost double the seasonings since it takes a long time for the seasonings to get into the crabs since their bodies are much better sealed
bring water to a boil then drop them in and cook for 12 minutes then pull out a claw and test if its fully cooked and separates from the shell easy, it should, so turn off fire and lift basket out leaning it at angle to sit on the pot at 45 degree angle to stop the cooking and cool so it better soaks up the hot seasoned water, wait 5 minutes then drop the basket back in the water and let it soak for 45 minutes.

Buy a can of Old Bay and follow the directions for steamed (not boiled) crabs.

Do I run through water a bunch to clean like I generally do with crawfish?
only if you got the crabs from the beach at grand isle or from a trawl you might want to do that so they flush out the sand and mud, otherwise its not needed

That’s precisely how I pick/eat my crabs but don’t remember ever being taught that.

Ice the live crabs into a coma and they won’t throw their claws. Most wont at least.

I have some friends in Maryland who can't believe we eat the legs and claws. They call that the "crab trash". I can't believe they throw that tasty sweet meat away. What a waste!
