Are you in Dallas? That's what happened to me one time I did that for a huge group. Not on my dime though so didn't care. Froze so much crawfish meat for dishes in the future. Ate for free for months!

Brought them down to Temple, just south of Waco. Boiled for 100+ and I have about 2 sacks worth to take home. That's after the people who ate them brought 2 sacks home.

Oh well, I'll peel them and vacuum seal for later.

Yea, that is exactly what I did. Pain but still worth it.

And I know that area. As long as people had a good time (and hopefully drank?) then it is all good.

I love to have butter to put on crackers to eat with the garlic and onion too.

Looks like great boil. I was on a team at my kids school last weekend and overall our group cooked 14.000 pounds.

Annnnnnd it’s comments like this that make me realize how many people just dump copious amounts of powdered seasoning in a pot a call it day. I’ve never not seen celery in every boil my family and friends have ever done. Onion, garlic and celery........ always.

Yep. I cut the root off about 2" from the bottom, wash it good and throw it in too.
