Crawfisherman and seafood sellers capitalize on the Lenten season. They charge a premium during Lent and then prices drop after Easter. They bank on the fact that only the rare few will go out and catch crawfish themselves instead of purchasing from storefront.

When I lived in Chicago they had Gulf Shrimp for $30 a pound at Whole Foods.

Paid $2.99 a lb in Hammond, for boiled, this weekend. Had to get 10 lbs or more for that price. They were $2.59 mid week! ??

It's fairly simple supply and demand. The "excuses" for natural reduction of supply in the past are valid.
1. Do they artificially inflate prices with collision from suppliers before Easter? Absolutely
2. Do adverse weather conditions suppress supply? Yes
3. Do spillway conditions dictate supply when all you can rely on is ponds early in the season? No doubt
But, the truth is, national demand is greater than ever. Crawfish exports are continually growing and that trend is unlikely to stop. As long as suppliers are capable of selling their whole supply at current market value, they will. And that will continue to negatively impact locals ability to procure cheap crawfish like we have in the past. We now have to wait until later in the season than we have in the past to see $1 lb until the spillway starts running and supply exceeds demand.

No doubt most of us understand supply and demand but the crawfish industry enjoys more conflated excuses than most.

I hope the crawfish farmers make a good living; I certainly won't be contributing to it at these prices.

People who think the actual crawfish farmers set the price of crawfish are literally idiots and know jack shite about the crawfish market
Maybe the price is high because
1. It's Feb
2. Idiots are begging for crawfish in Dec and Jan and will pay sky high prices for a low quality, scarce product
3. Houston eats more crawfish than the whole state of LA, plus a lot of crawfish are shipped to San Antonio, Dallas, Jackson, Birmingham, Mobile, Destin and points in between. Demand high + supply low = $ high
