That sounds so good. I LOVE tarragon and will be planting some in the garden again shortly. I made butter poached lobster tails a few times with tarragon and brandy. Outstanding flavor. I wanted to drink the butter sauce, but I didn't. I did make use of some toasted French bread, though.

underrated and underused herb. I cook cabbage with it, and it goes great together. People always ask how I season it, and when I tell them tarragon they look as if they have never heard of it.


Off topic, but another of my favorite seasonings is herbs de province. You'd be hard press to find me better flavored potatoes than with this. Weather I roast some spears or boil some small ones, this is my primary seasoning along with SnP and butter

You sound offended. Might you be one of those who always chides people for eating their steak any way other than SnP? If not then why are you mad?

To clarify, since apparently you completely misread my intent, I can give a shite less how someone eats their steak. That's my entire point. Maybe my word selection gave the wrong impression, but my "pompous" statement was directed to those who get offended when people try to do something other than SnP. I see it on this board a lot, and it baffles me why they get so worked up over something so innocuous as this.

Couldn't be further from the truth. I'd challenge someone to find a post where I chided someone for what they like. I'm usually chiding the chiders.

This is the lobster recipe I sort of followed. I deglazed with brandy and used mostly tarragon. Gosh, it was good.

I get the blue cheese crust on my strip at Ruth's. The thing is damn near 2" thick, so the thin layer of cheese you end up with on each bite can't really overpower.
