Skip the rosemary and try a little thyme.

I’ve since moved to adding fresh minced garlic and some fresh rosemary.

Like to finish with blue cheese on top.

Blue cheese and sautéed onion, stuffed in a ribeye and broiled.

I’m an Adam Perry Lang and I cook this standing rib a lot and make his board sauce.

A board sauce works well on steak, too. I usually make it out of what I have on hand and in the garden.

Mine is a reverse board sauce since it is placed on top of the steak.

Gorgonzola reduced with a little heavy whipping cream on a steak is pretty killer.

I'm a steak traditionalist but a neighbor of mine does this and its pretty damn good.

You sound like a joy to be around. My apologies for not taking the "Blue cheese on a steak" thread more seriously.

I love the flavor of beef. Don't need anything to compliment it. So, no! No cheese of any kind on any kind of beef.

Accepted. Have a lovely lovely day. May your skies be blue, but your steak never have blue cheese.

I started as a purist adding only salt and pepper.

This whole "purist" thing is beyond my comprehension. If the only way to enjoy a steak is with salt and pepper, then what's the purpose of having multiple steak restaurants? There would be nothing do differentiate their prep and servings. It's entirely limiting and pompous to only eat steak with SnP. While I like it that way, I also love it with blue cheese, garlic butter, hollandaise (sp?) and crab along with many other great pairings.

I don't like a lot of any sauce on my steak, but I do love sauces. One of my favorites is to brown butter and add fresh parsley to it while it's hot so the parsley fries a bit.

Ironically, it is your statement that sounds pompous. Some people like it with only S&P.

That's great. So are you saying that if one does not like it that way, they are limiting and pompous?

I like doing that with tarragon and squeezing lemon in it.. and pouring it over scallops and salmon. Delicious.
