My fried buffalo chicken balls.

Pulled drunk chicken, a ton of cheese, green onions, hot sauce, and pepper rolled into a ball, then fried in panko bread crumbs for about three minutes.

Call me old fashioned but I love a good jambalaya.

Also l've done the armadillo eggs from the other thread and they are always a hit.

I love doing chicken wings on the grill too.

I try to stay away from the cliche gumbo, jabalaya, etc.. Saturday I smoked a butt for 8 hours, shredded it, used the meat to make 2 pans of spicy enchiladas with fresh green chilis and 4 cheeses. The rest of the pork made tamales for Sunday.

We were playing a team from Texas, so TexMex seemed to fit.

I've always done the traditional BBQ, or grilled steaks. Something like that. Looking for new ideas!

Gumbo, jambalaya, etc. are great. I love them and enjoy them when they're available at a tailgate. There's just something about a hot BBQ pit, the smoke smell, pans of meat, and cold beer that will always scream football to me.

Skirt steak and chicken breasts BBQed with taco shells and fixings are also a great non-typical option

We try cook the opposing teams mascots.....but things we have done

Alligator Sauce-Picant/Blackened Gator/Fried Gator Couchon De Lait - whole hog n the cajun microwave, Duck Breasts, do a chili 1 week, fried froglegs/shrimp with pastalaya, we smoked chicken/brisket/sausage last week (texas bbq), chicken/steak fajita bar, obvious gumbo/jambalaya weeks, boudin, fried turkey/rice dressings, fried deer tenderloin, buffalo chicken wings, fried fish.

My team has Idaho this yr. Thinkin about doin a Potato Spud Bar.

I've see where people wrap the chicken mixture in egg roll wrappers then deep fry the buffalo chicken. Either way I'm gonna try this recipe. Sounds damn good!!
