For brisket I would stick with Salt/Pepper.

For Pork/Chicken I like "Butt Rub" - you can find it at most local grocery stores

A flaky salt & butchers coarse pepper is perfection when paired with good smoke. I prefer post oak, hickory then pecan. Brisket Turns into meat candy without the need for any sugar. It ends up with a sweetness that is unlike any other.

One day I’m going to add smoked paprika into the mix and see if it does anything for me as well.

Count me a fan of the various Dizzy Pig rubs. I like the coffee version, Red Eye Express, as well as the original and the Raging River maple rub esp on salmon.

I like most of Kosmos Q line, especially Dirty Bird Hot. Heaven Made Products are good as well.

Hmmm. I've only smoked 3-4 briskets. Texture, etc. has always been good (better each time), but bark was never just right for me. I've been using different rubs. Who knew good old salt and pepper would be the answer? I'll do that. Thanks all.

You literally cannot oversalt a brisket. Salt it till you think it's too much then salt it some more. Same with pepper IMO but opinions there may vary.

Guy at work said his brisket texture was off when he did a brown sugar base rub also. I did a brisket a few weeks ago and it turned out awesome with salt and pepper. It was my first time doing it. Going to try to repeat it again this weekend.

A prime grade brisket that is smoked correctly taste amazing with just salt and pepper. I like to taste the beef. Needs nothing else. But that is my opinion.

Everyone has their way.

I also don't sauce my ribs.

yea but there is always room to make things better. and there are things that are better than just salt/pepper,even thought that is good by itself.

hell i like to throw a good bit of cayenne in mine to get it some heat.

I've won BBQ contests with my brisket with 50 other entrants and I've never injected my brisket.
