I’ve always felt jambalaya is the main course and needs no sides. Has a starch/carb, multiple vegetables, meat, fat from the oil. It’s a completely meal.
If anything, jambalaya can be served as a side.
I’d go with a fresh salad if I needed something to cool the mouth with it. Anything rich would be too much.

I’m thinking a coleslaw would work very well with Evangeline made white bread, kind of like a pulled pork sandwich type of bite. Mayo based slaw only

Agree with green beans. Dandy Dan has a wonderful recipe, but you have to skip the potatoes in that recipe.

Green beans are a great option. But you have to take some of the smothered pork that goes into the jambalaya and throw into those beans!

I’ve always buttered 2-3 slices of white bread and slap some hot jambalaya on them and make a fold over sandwich.

maybe its just me but i always thought of dishes like jambalaya as a stand alone item type dish.

Usually just french bread but I've had some jambalaya plates with a couple strips of fried catfish or 2-3 chicken wings. All 3 pair well with it.

It's just fresh young green cabbage sliced very thin on a a mandolin with Italian dressing and creole seasoning. Might not be Vacherie Stylr but my mom is from there and all of her family prepare I this way.
