Mother’s is unpopular on this board but they are the ones who popularized the debris po boy.

They put both sliced roast beef (it's not what I would call "shaved") and debris on their poboys, though.

SammyTiger answered spot on. Roast the meat, there should be a substantial amount of drippings rendered in the bottom of the pan. Slice the beef and transfer to a pot with the drippings and let it simmer a good while.
