I accept this challenge! You definitely got my attention.
I went to their website...now I know how some people frown upon tomatoes in Gumbo because I'm not sure about no mayo on a Cheese Steak.
But there are exceptions

What’s the opinion on lettuce and tomatoes on a cheesesteak? It seems to me like it shouldn’t be there, but it doesn’t offend me if it is. Is there a strict rule regarding lettuce and tomatoes in Eastern PA?

Cisco's out Bethlehem Pike in Flourtown was our hole in the wall. We loved that place and nothing has opened to take it's place in the past five years.
(According to our waitress, they'd close once a year and pressure wash the inside.)

My advice. Watch a few videos and see how they do it and use that as a basis. Mark Wiens just had a decent one. But there are tons of videos on it.
It's subjective and Gino's and Pat's is just touristy.
