While searing the burger in a super hot pan WILL form a tasty brown delicious crust and is a very good idea, it will NOT lock anything in. See Alton Browns searing steak episode of Good Eats for proof.

Also, if you're going to "finish" a burger on the grill, save yourself the pan and use GOOD hardwood charcoal, get on side of the grill super hot, sear the crap out of your burgers, set to the "cool" side of the grill to finish. You should be able to achieve temps of 600 or more with hardwood coals. Even if you put a cast iron skillet on the highest setting on your range, I don't think you can get that hot, not to mention the smoke in your house might offset the benefit.

How much kosher salt do yall put? I tried this simple recipe out today and the burger came out overly salty.

we ate a recipie from the Southern Living magazine - May 2009....Pecan Crusted Pork Burger with dried apricot chipotle mayo....

i would have never tried this burger because of the pecans and the apricot....but goooood gosh it was money.

check it out. i ate 2 of them after we got out of the pool.....patties were super moist, and almost falling apart like shrimp burgers.....

I'm in N.Pt...been here about 5 years. It's great. Had a lot for sale, but let it go in April. Dr. Roy has 2 lots for sale now and I expect he'll get right on the price. Come across the track and he has the 2 corner lots on your left FSBO.As for FB,there's more congestion there, but if I was a golfer, I might like it. N. Pt. is great, however. Prop. values have held, I think, but appreciation will take time. Great time to make a run on a lot, however, and there are several homes for sale, too.I'm at 16 Waters Edge on the backside if you come thru the hood. Stop by.

we were the suspicious couple riding through the neighborhood yesterday.. there was one that looked desserted, u know anything about this one.. it was on the water.., also one on the front that Culp had listed, looked new..

Culp will get right on the price.The other house, I hear, is owned by Judy C. Martin, or one of her kids, and I don't know the story on it. Larry lives next to the Martin house(north side)and I know he wants to get out from under that one he just built.

A good sprinkle on both sides. It will also keep your burger from sticking. I do 4 minutes a side, but I like raw meat.

The burgers I cooked last night:

20/80 meat
egg
dash of tony's
chipotle tabasco
grilled red (or orange) peppers
Diced onion
Stuffed with jalapeno and goat cheese.

Combine egg, spices, and diced onion in meat

Make two patties (thin) and put jalapenos in the center, cover other patty's center with goat cheese, and combine the two patties and seal edges.

Saute' peppers

Grill patty

Top patty with peppers and eat on bun.

Has anyone ever combined ground beef and Jimmy Dean Hot sausage and made them into hamburger patties?

Am about to try this with some of the previously mentioned additional ingredients (i.e. bread crumbs, egg, Lea & Perrin, etc.).
