re: Burger in Lafayette

Mandez and Fat Pat's both have really good burgers.
I actually had dinner there on New Year's Eve. It wasn't terribly crowded but the services was just OK. The food was good and I've had it a number of times as take-out and have always been pleased.

My daughter loves the Grown-up Grilled Cheese.

Grilled Shrimp Wrap is good.

I haven't had a bad burger there.

Overall - solid bar food.

My granddaughter LOVES the fried dill pickles and the cheese sticks for appetizers.
COSTCO doesn't open early enough. I like the 7AM Saturday option at Sam's.
Try this one. Always a hit at my house.

2 lb. Ground beef
1 lb. Owens Hot Sausage
2 Onions (chopped)
1 Small Bell Pepper (chopped)
3 Boiled Eggs (chopped fine)
2 boxes Jiffy Cornbread Mix
Green Onion Tops

Brown meat, onions and bell pepper and drain off excess grease. Add 1 0r 2 cans for Cream of Mushroom Soup and water until mixture is moist. Prepare cornbread (2) as directed on box. Mix crumbled cornbread into the meat/onion/bellpepper/soup mixture. Add boiled eggs and green onion tops. Bake in 9” X 13” glass (Pyrex) dish for 35 to 40 minutes at 350 degrees.

For gravy, combine some of cornbread mix from above and milk in sauce pan. Cook over low heat (stirring often) until creamy.
I've had the same problem and just had to replace the entire thing. It doesn't look like they were made for the motors to be changed (unless you are good at sewing).
Try Nonc Kev's in Rayne.

Really good boudin and cracklins.

Just south of I-10.

The old Greyhound bus station in Crowley used to serve the best biscuits. Below is the recipe:

2 cups Flour
1 Tbsp. Salt
4 Tbsp. Sugar
1 Heaping Tbsp. Baking Powder
Pinch Baking soda
1 cup Buttermilk
¾ cup Melted CRISCO**

Mix dry ingredients in bowl. Add milk and melted CRISCO all at once. Spray pan with PAM. Make into balls and roll in flour. Put in pan close together and bake at 350 degrees until brown (about 35 minutes). Melt one stick of butter and brush over biscuits after they are browned.

**Many people substitute butter for CRISCO

Kirkland's gin at Costco is pretty good. Very good for the price.
I made a couple of those last year and they were great.

This year I plan to make them in straight lines. I would suspect they will taste just as good and will take up less room on the baking sheet.

Phillips looks HUGE in that video. I realize it's like a "man among boys" but he looks big for a linebacker. He looks thick in the lower half. That's not a bad thing. I can't wait for him to step in at ILB.

re: Smoker Questions

My wife bought me the Char-Broil with the Smart Chef feature. This feature is good in theory but balky in action.

I used it once to smoke ribs and it worked well.

I plugged it in today and it wouldn't connect to my Wi-Fi. After an hour on the phone with tech support, it suddenly started to work. Not sure what was or wasn't working but I sure hope it's not an hour-long call every time I want to use it.

It's running the pre-heat now with Apple wood and a little hickory.

I'll let you know how it turns out.

Thanks for all of the responses.

Smoker Questions

Got a new electric smoker for Christmas and am definitely in new territory.

I plan to smoke 3 chickens today.

What type of wood do you suggest?

Thanks in advance for your assistance.
I use this one with VERY GOOD results...

I like this one. Have had it for years.
It's really good. Been around for a long time. Nothing better than Louisiana rice.

Years ago, Supreme sold rice to Kellogg's and Budweiser (and they still might).

Lowe's/big box stores don't/can't sell the EP-330 with the stainless steel grates. They only sell the E-330 with cast iron grates.

According to the ACE Hardware website, the price I got it for was $100 off the normal price (didn't realize that when I originally posted).
I took advantage of the "no sales tax" weekend at Stine's and ordered the Genesis EP-330 today. They only had the stainless in the store and I wanted to "Smoke" color.

Got it for $749 (regular price) but with 10.5% sales tax in my town, saved nearly $80. It'll be in on Thursday and I can't wait to try it out.
7mm stainless steel is what is listed in the description.
I've decided to get rid of my CharBroil TRU Infrared and have decided on the Weber Genesis.

The Genesis 310-EP has the stainless steel grates while the 310-E has the cast iron grates.

Which are better?

Also, is the Sear Burner on the 330 worth the extra money (I realize you also get the auxiliary burner for the 330 price)? How often do you use that?

Thanks in advance.
