Jay's- Dunno how they stay in biz. Not bad but about like Podnuhs at double the price

Podnuhs- ho hum

Brothers on Govt- another not bad but outrageous price for whatcha get

Sonny's- not gourmet but always satisfied

Voodoo- non traditional to me, I go, I enjoy but it's a variant

Corky's- appalls me. lived in Memphis, eating there to locals would be like eating at Red Lobster here

TJ Ribs- good and spendy, not partial to big bill BBQ personally

Yes it can be. When I smoke a brisket, I take the point end of the brisket and chop it up into chopped beef for sandwiches. I then take the flat and slice it.

Off subject, but I have to disagree. The spot on Poplar heading toward Germantown has a great following among locals and it produces some very good bbq, especially dry ribs, IMHO.

Sure you'll get a lot of locals with a million+ population. People would eat at a Red lobster in BR too, doesn't make it great.

Not off topic, Corky's at that motel on Siegen.

Little joint, 3 Little Pigs on quince my Memphis fave.

You can BBQ anything. BBQ is a style of cooking and that is all. It is like roasting or frying.

Thats right, its either BBQing or Grilling. I am certain there is a true expert in the house somewhere, but I think true BBQ is done using wood............

I suppose that using a Gas grill or Charcoal would be considered Grilling..............

Same here...thought it was considered BBQ when indirect heat (i.e. smoking) was used

BBQing is done over low heat, primarily using some type of coals from hardwood(oak, hickory, pecan) or fruitwood(applewood).

Now, there are some places that use commercial smokers, which don't hardly utilize any wood at all, and while it is easier to cook with them, it doesn't really impart any smoke flavor at all. What's the point of eating BBQ if you can't have any flavor.

Some folks use sauce and some don't. I'm not a big fan of sauce. I'm a big fan of Texas style BBQ (brisket, sausage, wild game, goat) and feel that if you season your meat properly, know how to handle your pit(controlling temps, what to listen and smell for) you can create a great meal that doesn't require any type of condiment.


There is a place in Memphis, rib place I think, that uses charcoal to cook their ribs and do a pretty decent job at it. But normally, when people use charcoal, it's grilling not BBQing.
