They aren't the same type of restaurant, and though I was a huge fan of the Destin LL location, I hate the BR outfit.
The original owner of the Destin location is the same owner of the BR location. He sold the Destin location..."retired" for a couple of years and opened the one in BR.

When did they go downhill?
Whenever they changed their fries to the thin-cut ones. Whoever was in the kitchen and made that decision was screwing up all sorts of things back there. The boudin balls went to shite, the cheese fries were terrible, almost everything seemed to suffer. I ordered a cheese fries once (campus location) and got the thin-cut ones with two slices of cheese melted on top.
I don't remember an exact time frame, but that was probably 7-8 years ago or so. They have since righted the ship, and stepped up their beer game.

I don't remember a time without thin cut fries (I've only been in the area 7-8 years) , but over the past year or so, they've moved from thin cut regular fries.. To a battered (??) fry. I love the new ones. Super crunchy and seem to have a batter or something.

it is a travesty that they didn't call the Baton Rouge location Rouxbonnet.
This reminds me of Louis CK's bit on the word amazing.

I save travesty only for grave business branding mistakes, so I think I'm ok.

Louisiana Lagniappe is my favorite but as others suggested Parrains, Roux 61, and Robertos are very good as well.

They used to be thicker... not like steak fries, but just a little thicker cut. They probably went to the thin-cut ones around 7-8 years ago, so you likely just missed out.
I don't think the old ones were battered.

new Roux 61 on Bluebonnet
I have heard numerous good things about this place. Need to make it over there one day soon.

Yeah this batter or whatever it is seems to be a new thing over the past year or so. And I don't even know if it is really batter...just it's a lot like a Popeyes fry so I assume.

On another note, why the heck did The Chimes change up their loaded fries?

I ate there last night. The shrimp and alligator cheesecake app is really good and so is the Ahi tuna salad.

I agree with this list as well. All good. The one with the absolute best gumbo of these to me is Roberto's and its not even close. That being said I have not eaten at Diguilios or Mestizos yet so can't vouch for those guys.

to be truthful BR's cajun food scene is a joke, LA Lagniappe is good, but not great

Don't spend much time in BR so I am by no means an expert.
Robertos was delicious when I had it. Looks like they have duck on the menu (may be new or may have just not been on the menu when I went) which I assume is awesome.
and
I can absolutely destroy 5 pounds of Sammys crawfish with the fried alligator app.
Those two get my vote.
