I notice a difference and use a rack for all fried foods, but I cover a baking sheet in foil so all I have to do is toss the foil and clean the rack. No cleaning the baking sheet. Sometimes, I just put the rack over a sheet of foil.

Why? Because I suggested that we should consider returning to the oils that humans used for millennia prior to the early 20th century at the earliest?
Man, you love your industrial solvents that cause health problems. By the way, some studies are showing that PUFAs also may contribute to mental health problems. Your adverse reaction to someone that suggests that they may be problematic certainly lends credence to that.
I find it so funny how people get so angry over this.

Let me ask you a question and anyone else on this board that would care to answer.
The OP said he wants to FRY 60 pieces of sheepshead salt water fish in South Louisiana.
In what bizzaro world do you think some South Louisiana baw or coon arse is going to batter and deep fry their fish in olive oil?
Considering I might fry fish once a year I’m not too concerned with my PUFA intake and if I fried 60 pieces of fish then strained and saved the oil I can guarantee I would be less than one cup off out of 3 gallons.
But what the hell gotta live out there on the edge you know. Didn’t wear a bike helmet or a seatbelt as a kid. Old man would tell me “put the god damn window up son-you’re letting the smoke out.”
Nancy it’s not going to be PUFA that gets me.

And you neglected to read where PUFAs are in so many of our foods now. You don’t just get them from your once a year fish fry. Of course your anger prevented you from that logical reasoning.

Oh I read it. I just don’t eat a lot of box or processed food so I’m not concerned. 80% of what I eat-with the exception of dining out, I’ve either grown, raised, caught or killed. This has been lifelong not a recent movement.
See I believe in moderation. I use plenty of olive oil. I don’t care for the taste of coconut oil. But peanut, soybean, pecan, walnut all have their place as does canola etc...

But to the actual question of the OP who asked for tips what I normally do is pull a bag of speckled trout out of my freezer and thaw in cool water in the sink. Then I get a six pack of beer and a bottle of wine and I ride 2 miles from my house, hand the fish to a friend, open a beer for him, pour some wine and shoot the shite while he fries since he’s a master and I’m not.
And he could be frying them in used motor oil for all I care. Bit of salt, squeeze of lemon or dash of malt vinegar and they go down well.

You can actually. While olive oil has a lower smoke point than other oils (not by much though), it actually oxidizes more slowly than other oils. Not sure why everyone is focusing on my olive oil comment though, since I mentioned other types of good fats.

That's wonderful. The majority of people in South Louisiana, Texas and Mississippi are morbidly obese and not in good health.

Take it one step further. Peel the outer skin off a whole onion and drop it in the oil. The onion will turn black and it helps keep the oil from burning.
I'm not an onion fan but my brother is. He will peel the black/burnt layers off the onion and eat it with his fish.
