BBQ prices started going up when BBQ became trendy. The old, cinder block, pit-style places were known for cheap eats. You got a pile of meat, couple of slices of white bread and a sweet tea and you were happy about it.
Now it's pulled pork, with bourbon sweet potato casserole, hand cut kennebec fries, and Pittsburg slaw.
Don't get me wrong, I love all of it, but the BBQ scene has really changed in the past couple of decades.

And yet with the higher prices we are complaining about, most can't make it in business doing BBQ. You hear that all of the time about how many try and fail because it's just hard to make money doing it.

cheap cuts turned into delicious food with simple sides>becomes very popular over time> becomes trendy> people see it as an easy buck> bbq pops up all over, people get into home bbq more> cheap pieces of meat become in high demand> no longer cheap meats, so no longer an easy buck.
the lesson learned here? if you find something good, STFU about it and keep it to yourself. less the trendy crowd will ruin it.

Double edged sword. How is a place that keeps the lights on due to volume sold stay in business if there isn't word of mouth??

I recently paid 31 dollars for 10 wings and two sides at blue oak. I really wasn't paying attention to the price. When she told me how much I really wanted to cancel.

Biggest difference now is BBQ places aren't using cheap cuts of meat anymore. It was mostly Choice grade meats. Now pretty much everyone wants to use Prime. Pay Prime prices for brisket that only yields 40% of meat is why you see everyone doing burgers. BBQ business is a lot of prep work, bad/long hours, and end of the day there isn't much money to go around.
