Balsamic Roasted Brussel Sprouts with Bearnaise Sauce

Wish I had taken pictures. This is amazing
2lbs sprouts, cleaned & halved
1/2 cup oil
Salt
Grd pepper
Garlic powder
Onion powder
1/2 cup balsamic vinegar
Toss sprouts in everything but balsamic
Place on cookie sheet in single layer
Roast at 375 for 15-20 mins
Remove from oven and turn
Drizzle vinegar over sprouts
Return to oven for another 10 mins
Bearnaise Sauce
1/4 cup white vinegar
1 shallot (Finely chopped)
1 tsp tarragon
1 tsp parsley
1/4 tsp salt
1/2 tsp grd pepper
2 sticks butter
2 yolks
Combine everything but butter and yolk. Cook on low heat and reduce (about 5 mins or so)
Add the butter and melt on low heat. (Constant stir)
Once butter is melted, add yolks, constantly stirring On low heat, so not to scramble the yolks. Constantly stir until temp reaches 135 deg. Remove from heat and cover, let cool.

That sounds good. I'm on low carb and will try it out. Have everything but tarragon and shallot, will sub oregano and vidalia and report back.

We been eating brussel sprouts every week.
cut in half, drizzle with olive oil, salt and pepper, and lots of lemon pepper. Bake for 25 minutes at 425 to get them good and crispy. spray lemon juice on them once you take them out. Awesome.

Brussel sprouts are awesome. I'll switch up how I prepare them.
Last night I made a drizzle out of olive oil, juice from a few lemons, salt, pepper, and then I like some heat so I have hot pepper powder I'll add (Im sure cayenne or red pepper flakes would be good too, I just like it hotter).
Halve the sprouts, toss in the sauce, then cook at 425 till crispy.
Finally, turn the oven to broil, crowd the sprouts on the cooking sheet, spritz with a little more lemon or leftover sauce, then cover sprouts with shredded parmesan cheese and pull out of oven when browned
