Baking Powder or Cornstarch on Wings

Should I dust wings with baking powder or cornstarch for the crispiest wings? Going to cook on the Weber grill.

I mix it with my seasoning. Something like 1tsp of baking powder per 2tbs of seasoning. Mix it together really well in an empty spice container and just label it.

Cornstarch & don't over do it.

Baking powder/ soda need to be rinsed off before cooking to prevent a chemical/ metallic taste.

Cornstarch is more forgiving IMO.

I've used baking powder for this and never had that happen. Not sure about soda.

Baking powder for sure. Best oven wings recipe I've tried uses it.

CS. I take a small round bowl and pour my rub in and then add a tablespoon of CS and mix it and then take a zip lock pour half at the bottom, throw the wings in, other half at top and shake until the rub is full coated the wings.

I can always taste it. My guests said they couldn't, but i could. Now I stick to cornstarch velveting...

Cooks Illustrated recommends baking powder. They say it breaks down proteins within the skin and find it aids in browning better than other ingredients.

I tried their recipe twice and never noticed a metallic taste claimed by others. But some people are more sensitive to that than others. If you are, you can use aluminum free baking powder.

Double fry and won’t need either. Unfrozen 8-10 minutes. Remove onto drying rack, then fry for another 2 minutes.
