need a good baked bean recipe...to go with brisket...i am open to any other ideas for sides also...thanks! oh and it only needs to feed 6..

Sides:
Blue Cheese Cole Slaw w/ cilantro
Roasted Corn Grits

For the baked beans...
Cook up some bacon
Cut up some onion and cook in the bacon fat
Add the beans and add some brown sugar
Continue cooking

how are you doing your brisket?

my no fail way for beans was add a little brown sugar, tiny bit of mustard, diced onions, black pepper, and strips of bacon (only one or two)to an oven safe container of beans....then put the beans on the rack under the meat in the smoker or pit. Let the beans smoke with the meat for a while, and catch some drippings.

eta: fresh cilantro, onions, and browned breakfast sausage stirrred into a pot of beans is also really tasty. LSUDad posted this tip a while back.

Anyone know anybody in La. who actually makes their own REAL baked beans (i.e., not using a product out of a can)?

I've literally never seen or heard of anyone here doing that. I've been tempted to try, though.

nope.

i wonder how much better it really is? Beans seem to be one product that cans really well.

I've used this one a few times with brisket or pulled pork. Always a hit and never any leftovers. This is supposed to serve 8. I usually double it. Enjoy

INGREDIENTS
1/2 pound ground beef
1/2 pound bacon, diced
1 medium onion, chopped
1/3 cup sugar
1/3 cup packed brown sugar
1/4 cup ketchup
1/4 cup barbecue sauce
1 tablespoon prepared mustard
1/2 teaspoon pepper
1/2 teaspoon chili powder
1 (16 ounce) can pork and beans, undrained
1 (16 ounce) can kidney beans, rinsed and drained
1 (16 ounce) can Great Northern beans, rinsed and drained
DIRECTIONS
In a large skillet, cook beef, bacon and onion until meat is done and onion is tender. Drain any fat. Combine all remaining ingredients except beans. Add to meat mixture; mix well. Stir in beans. Place in a greased 2-1/2-qt. casserole. Bake, covered, at 350 degrees F for 1 hour or until heated through.

eta: had some brisket with kraut at a house in New Braunfels....holy moly it was good.

I would agree. I make beans from scratch a lot b.c I don't like all the additives they put in the canning process.

I usually add a package of my vension and pork pan sausage.. Also, mustard, onions, ketchup and a little bbq sauce.

one of my favorite bbq beans recipes.

Ingredients
6 strips of thick cut bacon
2 medium onions, coarsely chopped
1 red bell pepper, coarsley chopped
1 jalapeño, or more or less to your taste, coarsley chopped
1 can (15 ounces) red kidney beans, drained and rinsed with cold water
1 can (15 ounces) white kidney beans, drained and rinsed with cold water
1 can (15 ounces) black beans, drained and rinsed with cold water
1 can (16 ounces) Bush's Original Baked Beans
1 cup your favorite BBQ sauce
2 tablespoons molasses, any grade
1/4 cup Kentucky Bourbon or Tennessee whiskey
2 teaspoons dry mustard
1/4 teaspoon salt
1 bay leaf (try not to leave this out)


Make sure you are using a 2 quart or larger pot or Dutch oven. Chop bacon and brown over a medium heat. Add the onions and peppers (bell and jalapeno) and cook until they wilt. depending on how fatty the bacon is, you might want to drain off some of the fat before adding onions and peppers.

add everything else, bring to boil, then quickly lower heat and simmer for 30 minutes (or longer...i usually let it slow cook on the stove for an hour or two. you can add water if it starts to dry out but i find that there is usually plenty of liquid). stir often to prevent sticking.
