Do you not preheat your cast iron? I don't understand how you could do 6 minutes seared, 6 minutes in the oven, and still have it come out like that.
I eat my steaks more blue than rare, but with a preheated skillet I'm searing for maybe 45 seconds to a side and a minute per side in the oven.
Just curious.

Never tried prime sirloin. I usually try a ribeye, never thought about letting it rest and then popping it in the oven for just a few min.

I let the steak sit out for 2-3 hours prior.
preheat the oven to high (400-500)
preheat skillet with olive erl until it smokes. alot.
the steaks were pretty thick and I put on a ton of saltnpepper which i think helps insulate.

top sirloin from WFood. gf bought it thinking it was better b/c of the sale. wasn't happy with the purchase. but after cooking a couple of these bad boys i'm hooked. they're fatty like a ribeye but taste more like a strip. good stuff and cheaper!
