baby back ribs vs st louis style

I usually take my baby backs and rub them, foil them and precook them in the oven about 2 1/2 hours at like 275 then finish on the grill, is there any difference if i'm cooking st louis style?

I am not sure why but I find St Louis works pretty good with the oven then grill method. I do like 3 hours then hit it on the grill.

IDK. I do know I like dry rubbed BBQ vs soaking it with sugary BBQ sauce. Yak. Pair it with creamy slaw, yummy.

Why do you bother w the oven? I can do baby backs on the grill in an hour and a half?

BGE or even a weber.

2 1/2 to 3 hours tops for St. Louis cut Spare ribs which is what they are.

Oven cooked ribs suck IMHO. That is the way they do them in Wisconsin, gross.

I think you should defenitely cook them in the oven longer than baby back. You also have more fat and connective tissue so they won't dry out unless you really overcook them.

Much more flavor than baby back in my opinion. I think you will be pleasantly surprised.

St. Louis cut are my preference. They have more meat than baby back. Smoke them with a rub at 275. About halfway through I put just a little bit of sauce on top and cover them for a couple more hours. Then uncover for like 20 minutes to get the sauce to stick so they aren't as saucy. So good.

2-2-45minutes with Baby Back


Are there other way to do ribs? Sure. But the above methods always come our perfect so why try anything else

The difference is that back ribs will taste like rub, and spareribs will taste like pork.
