Asparagus... why do you taste so good yet smell so bad?

I bet that has scared some new asparagus eaters over the years.
It doesn’t do it to all people. Sort of like how cilantro tastes like soap to some people.

Asparagus contains a specific acid called "asparagustic acid" - really - why didn't they get original or something. you may better know it as 1,2-dithiolane-4-carboxylic acid with the chemical formula - C4H6O2S2 (4 carbons, 6 hydrogens, 2 oxygens and 2 sulfur atoms.
The sulfur in the acid is where the problems com from. The body quickly converts the acid into several sulfur containing compounds that are similar to the odor of garlic or skunk spray. I looked them up to be sure. They include dimethyl sulfide, dimethyl disulfide, dimethyl sulfoxide and dimethyl sulfone. All of these sulfur containing compounds
1 - smell bad
2 - are highly volatile, come right out of your urine and straight up to your nose.
They are also similar to the volatile organics they put into natural gas to make it have such a distinctive smell.

It's far more likely that you and your wife just can't smell it, but your pee farts still let the rest of us know when you've had asparagus.

Or sautéed in a pan for 7 minutes with olive oil, garlic and red pepper flakes.. and salt and pepper.
Easiest vegetable in the world to cook.
