Anyone throw whole pieces of chicken in gumbo?

I know most people pull the chicken off then use the bones to make a stock. But let’s say you smoke a bunch of chicken then throw it all in with the bones on as the gumbo cooks.

Sure. That’s not unusual. Nothing wrong with it if you don’t mind dealing with the bone.

That’s the only way I do a simple quick gumbo. Cut up a fryer and let it simmer with the other ingredients for 1 hour.

I’d likely pull the chicken off at some point while it’s going to get rid of the bones. Just curious if it would come out any different cooking it all in the gumbo as opposed to just doing the stock with it.

I don't debone hen when I make a gumbo. Mine is probably a bit more rustic than most as I like chicken hearts and gizzards in my chicken and sausage gumbo.

Every time. Bone-in chicken thighs (skins removed) go in the gumbo. I debone once the meat is ready to fall off the bone after cooking a while.

I buy a package of chicken necks to make the stock, but I brown those first under the broiler.

I start off my gumbo with whole pieces cut up like I was going to fry chicken. I do season and brown the chicken off a bit prior to cooking down my trinity in the roux.

I'll cook the chicken in the gumbo until the meat starts to pull from the bone, remove it to cool, pick the meat off the bone and put it on the side until the gumbo is finished cooking, then add it back to the pot. That way it doesn't cook down and break up more.

I don't like bones in my gumbo.

sometimes. sometimes I buy a rotisserie and debone it.

Oh yeah, my grandma would laugh at pulled chicken in gumbo.

I do the debone and make stock, I like to brown the skin and bones in the oven first, richer flavor and color. A friend serves his gumbo over fried chicken, it's a mess to eat but damn delicious.

Gumbo is not gumbo without bones and skin. Gumbo Lite = skinless, boneless chicken meat.
