I'm inferring from your preferences that you might like darker, more traditional roasts over lighter roasts. Third Wave is really into lighter roasts of a variety of beans, which brings out a very different flavor. Lots of florals, fruits, etc... so you might prefer traditional Italian/french style bean and roast selection.
well im willing to try a multitude of things. I love hoppy hazy beers but i also love dark porters.

Before you try any roast of bean I think you need to look at your water first. Are you using tap, bottle, spring or whatever. Water is also key here. Does Italy add chlorine to their water? Is it hard or soft etc. personally go spend the money on a Everpure under the counter water filter before you start playing around with different types of coffees. All coffee houses have some form of commercial water filter. Once your main ingredient is correct then any quality of coffee can be compared equally.

well i brought this up earlier in the thread abotu if people have experimented with the water chemistry. I have a RO, RO/DI filtration system and can create different water profiles.

Explain to me why I need a specific set up to make cold brew at home.

Can’t I just put the grounds in a big jug, pour some water over, and rub the mixture through a filter after 24 hours? Does it need to be more complicated than that?

Yes. As long as you have a good filtration method you can just put grounds in a mason jar with water.

You're gonna want to filter it 2-3 times to get all the sediment out but this is a very simple and low tech way to make cold brew.

Understood but running everyone through a coffee filter and a sieve a couple of times should do the trick, correct?

Yeah, I was just answering his question and raise awareness to how easy and cheap it is to make your own. There are a ton of cheap and easy methods,

It's all a matter of preference. I have a filter I got off Amazon for like 10 bucks. But really it's just water + coffee + time ...

One of my most memorable pulls of espresso in my life was at a little cafe across the square from the Pantheon in Rome.

i dont like the tody system with the stopper. I ordered the Ovalware System

I don't know how I missed this the first time, but this looks like a better solution than Toddy. Unfortunately, both Amazon and the Ovalware site are currently sold out of the 1.5L version. I'm going to have to pick this up when they are back in stock.

The Ovalware system sucks.

My previous experience is with the Toddy. Unfortunately, my glass decanter broke and instead of buying a replacement, I decided to try this Ovalware system. It was a mistake.

Yes, the Ovalware looks nice. But it's not a practical product. The simple reason: water to coffee grounds ratio.

Although the Toddy setup feels clumsy with the cork and the filter is a pain to clean, it makes GREAT cold brew concentrate. That's because the brewing container holds a lot of coffee grounds.

The Ovalware looks sexy and (at first) seems nicer with the stainless steel filter. But that filter does not hold a lot of coffee grounds compared to the amount of water in the carafe.

Ultimately, it took me twice as long to brew coffee half as strong. In 12 hours I can get a strong concentrate with the Toddy that needs to be cut 1:1 with water. It took 24+ hours to get regular strength coffee that I could drink straight from the Ovalware.

Twice as long to brew, half as strong (which means half as much coffee and having to make coffee twice as often) is just a failure.

Also, the stainless steel filter allows tiny coffee particles / sediment into the carafe. The felt filters on the Toddy produce a clean product.

I already ordered a replacement Toddy and I'm sending this Ovalware back.
