Anyone make their own chil powder?

I had bunch of fresh thai bird chiles left over yesterday so I threw them on the smoker for about an hour then dried them in the oven overnight. It got me thinking about making my own chili powders. Interested in seeing what combinations of chiles you guys use.

I typically use Mexene fortified with some chili arbole and chipotle.

I had a huge crop of serranos a few years ago. I smoked them for a few hours, dehydrated them and then crushed it into a powder. I still have some left and use it often.

I use Mexene, mixed with Gebhardts, with smoked whole poblanos, jalapenos, and serranos.

I still have some of this left too. It's fantastic.

I smoked and dried some tabasco chilies last summer and crushed into a course powder.

I've done all sorts of peppers with the dehydrator. From sweet Italian frying peppers to a surplus of shishitos. It works wonders as an additional layer of flavor in dishes. I've done it with hot peppers as well and nearly killed the family with dried ghost peppers in the food processor one time.

Dehydrated some a few weeks back. I must've used too many chipotle peppers...was not impressed with the flavor.

I have taken a bunch of extra tomatoes and dehydrated them then stuck them in a blender to make tomato powder. I used it just like tomato paste. I'd guess that peppers would work just about the same.

Yes,about to make a batch now. I buy dried peppers and grind them to make a powder mix.

This is my go to but I make it into a paste - I use whatever I can find at the grocery, adding in chili de arbol for heat. New Mexico, ancho, guajillo, California. Some of the more Mexican groceries have better selections. Deseed, heat up in the microwave, add to a bowl of chicken breath and microwave both together. Throw that into a blender and add that entire paste to my chili.

Just look at the yellow post-it.The number to the right is the number of dried peppers. For the oregano,garlic,cumin and smoked paprika it is the amount to the left. I get my dried peppers at Fiesta grocery as they have a huge variety to choose from. This makes enough powder for 3 to 4 batches of chili. I put it in the freezer to keep the remainder fresh.
