Anyone make homemade cheese?

I've made cream, cottage and mozzarella before. Going to try a couple of cheeses. I made a garage freezer with a thermostat that keeps it anywhere between freezing to room temp. so I can age. Was going to age meats, but figured cheese would be more fun.
Want to start easy with mozzarella, feta and other no age. Just to get used to cultures and rennets.
Then will order wax add make jack, Colby and attempt cheddar.
I guess the hard part is waiting so long, but seems like fun.

Alex the French cooking guy just did a great series on Mozzarella. On YouTube. Took the guess work out it and worked through a ton of errors. He went to Italy to try the real stuff too.

I've made 5 or 6 cheeses. Some better than others.
I made my own press but plan on buying one so I know exactly what pressure i'm pressing. I also switched from using tablet rennet to the liquid. It's just easier. My biggest problem is drying the curds out too much, causing the cheeses to become dry and crumbly.

We have made quark for Bavarian cheesecake, since it is nearly impossible to find quark in our area. Super simple.
