I grabbed a piece of fried liver at Keesler AFB one time, not knowing it was liver. Worst chicken fried steak I ever tasted.

Calf liver is much milder than beef, which can be really gamey. Calf liver is one of my favorites.

I'm gonna smoke a beef heart sunday. I'm thinking about a merlot marinade probably add worcester sauce as well. Finish with Texjoy steak seasoning. Thoughts?
