Anybody got a good boiled peanut recipe with crab boil?

I only boil in small batches with just 4 lbs. being the max so I can do that on my stove in the kitchen.

I only use 3 gallons of water and add 18 oz. of the powdered Louisiana Seafood Boil Seasoning, a couple squeezed lemons, 3-4 cut up habanero peppers and several bay leaves and let that come to a boil.

Then I add the raw peanuts and use a good size utensil to gently push the peanuts under the water so they expel some of the air in the shells. As they cook I will stir them to bring the ones on the bottom up to the top and vice versa so they cook evenly.

I use a gentle boil and do so for between 2 to 2 1/2 hours where they are done to my liking. Test a few along the way to see how they are cooking and stop the process when it hits your taste profile.

Then I strain them and let them cool a bit and then I like to put them on trays in a single layer, pop them into my oven heated to 250 degrees and let them dry out a bit------not roasted, but eliminate some of the moisture.

After that I let them cool and bag some up to freeze to eat later and put some in containers to eat over the next few days. I find they last longer if you refrigerate them if you want to keep some ready to eat after a few days.

I like doing them in a crock pot on my back porch so it doesn’t smell up the house. 2-4 lbs at a time. 1/3 cup of salt. 2/3 cup of liquid concentrate crab boil. Cook overnight. Easy easy.

I had my brother-in-law over a few nights ago for dinner and had just finished the boiled peanuts and they were on the table in the kitchen where I was finishing up the meal.

I told him to give the boiled peanuts a try and he hammered about 30 of them in a couple minutes with a cold beer I had given him. When he left to go home I gave him a quart bag to tide him over and he was happy as a pig in slop.

Give it a try and hope you like it. Just be sure to not overcook the peanuts-----------unless you like them spongy and soft with no real texture.

How can anyone not like boiled peanuts? I can eat bags of them.

I guess if someone didn’t grow up with them.

I didn't discover boiled peanuts until I was in my late 30's, and luckily I didn't get some that were like the ones I picked up on the way to visit my now late father-in-law when I was in my mid 40's.

I kept seeing roadside signs for an antiques shop that also sold boiled peanuts claiming they were the best around. I stop and get a pound and continued on my drive. Then I decided to try a few and they were the absolute worst peanuts I ever put in my mouth. They had cooked them so long they were nothing short of mush in a shell.

If those would have been the first I'd tasted, I'd never tried them again more than likely.

I use 1.5 boxes of salt and one 8 oz bottle of crab boil per bag of peanuts

The only thing extra I'm doing is drying them out a bit in the oven, and not enough to actually dry roast them, just enough to eliminate some of the liquid in the shells. I think it helps them freeze better that way.

But, you do it your way if it works for you. I'm just saying what I do and the results are how I prefer them.

And I didn't mention oven time, but I do mine for at least 1 1/2 to 2 hrs. at 250 degrees.

No, this was on Hwy. 190 past Lobdell about 20 minutes when heading toward New Roads.

Yeah it doesn’t feel like football season without boiled peanuts.

I first had them in the early 80’s. My dad took me to Jackson to see Ole Miss play Alabama and I think it was Bear Bryant’s last season. Someone in the parking garage gave us a bag of them and I was hooked. My dad is from rural Mississippi and remembered that he loves them after that and it’s been a staple for us ever since that game.
