I've had leftover whole smoked shoulders that I wrapped and froze then basically reheated in a crock pot and they were great.
Also just put a fresh one in with some seasonings and it turns out fine but it doesn't taste like smoked butt, it just tastes like roast pork. Nothing wrong with that either.

Searing is key. Turns it into a good braise instead of just a crock pot shred. The sear will give you good flavor as well as the texture which will be as close to a bark as you can get with a crock pot.
My favorite thing to do with a pork butt and crock pot is to braised then shred it, then fry it up in a skillet for makeshift carnitas.

This is exactly what I do when it's really shitty weather in the winter and I want some pulled pork.

I fill the bottom of the pot with hockey pucked sweet potatoes. Gets the roast up off the bottom, and makes for a decent side. Sprinkling some cinnamon and brown sugar on them is even better.

I’ve done it stovetop in a big pot and it’s fantastic. It’s pretty hard to mess up.

Did one yesterday. Rubbed it down with taco seasoning and put in the crock pot with a bottle of Shiner Bock. Cooked until it fell apart. Served in taco shells or flour tortillas. Shredded cheddar and some salsa on top. Queso Fresco works well if available also.

I always buy two twin packs of Boston butts when Rouses has them on sale for $0.99/lb. I'll vacuum pack them and usually break one down for country ribs and grind pork.
I always make a pulled pork for pot luck at work, and everybody races about it. The plus side is i feed 20+ people for under $10.
Anyway my method is to make a rub with equal parts: kosher salt, coarse ground black pepper, paprika, granulated garlic and granulated onion. I'll then smoke the butt for two hours at 225-250F. After the 2 hours are up, I place it in a crock pot with a can of Coke on high overnight. The next morning, I'll take out the butt to pull and put the liquid to the side. I'll only add liquid if it's going to sit ask day in the crock pot or if it looks dry.
If you don't smoke it, a cap full of liquid smoke works fine too. I just started smoking for a couple of hours, because I am still trying to perfect holding my temps on my Akorn grills.
