Any Unique Taco soup recipes?

With this cold front coming in tonight I'm curious if any of you have a unique or different taco soup type mix that you dont mind sharing.

not sure how 'unique' taco soup can get. it's pretty straightforward.

maybe mix some loose chorizo in with the ground meat?

I never hear of taco soup except on here. My Momma never made Taco Soup....she did make tortilla soup and posole.

Ours is pretty simple. A pound or two of ground beef, a couple packets of hot taco seasoning, and add two cans of hot rotel, a large can of black beans, and a large can of corn. Shred some cheddar and a little sour cream on top.

Our neighbor made some recently that was pretty tasty but had a unique flavor, we asked her what it was and she said she puts a little bit of Worcestershire in Coca-Cola it.

So if you are wanting to change up a pretty common recipe, give that a shot

Look in the stickied recipe thread for my recipe for posole on p 2. Not a taco soup, but you can garnish with tortillas etc... It's a fine soup for cold night.

I wouldn't say this is unique, but my recipe is:

1-2 lbs ground beef, a can of corn, can of black beans, can of pinto beans, can of kidney beans, a can of rotel, a taco seasoning packet, and a packet of dry ranch. We typically make our own ranch & taco seasoning in bulk and store it in little canisters & use as needed.

I actually haven't cooked this in a while, but made this last night!

Taco Soup

2 Lb. Of Ground Beef
1 Red Bell Pepper(diced)
1 Green Bell Pepper (diced)
1 large yellow Onion (Chopped)
1 Pkg. Of Extra Sweet Corn
1 Can Of Rotel
1 Can Of Stewed Tomatoes
1 Can Of Black Beans
1 Can Of Pinto Beans
2 Cans Of Tomato Sauce
2 Cups Of Beef Broth
1 Pkg. Of Ranch Dip Mix
1-2 Pkg. Of Taco Seasoning Mix (Use One Pack At A Time, Taste, Add Another If Necessary)

Seasoning (if necessary): Salt, Pepper, Garlic Powder, Cumin, Chili Powder (Wait Till After You Add Taco Seasoning)
Garnishes: 1 Bunch Of Cilantro, 1 Pkg. Of Mexican Cheese, Tortilla Chips, Avocado

Brown Onion and bell pepper. Add meat and one pack of taco seasoning and brown it. Add Remainder Of Ingredients And Season To Taste. Simmer For 30-45. Serve And Garnish With Tortilla Chips And Avocado.


Edit: some times i will chop up a couple zuchini or yellow squash. Chayotes/Merilitions are in season right now and can go in place of zucchini or yellow squash

Ground beef (turkey)
Taco seasoning
Enchilada sauce
Corn
Rotel
Dry ranch
Zucchini

The enchilada sauce is a little different and gives the broth a little more pop to it. Made it tonight and it hit the spot on a cold windy evening!

The other thing I make in the crock pot that's similar, but not really a soup (unless you omit the rice)

Fresh spinach
Frozen corn
Rotel tomatoes
Chicken breasts
Taco seasoning
Dry ranch
Enchilada sauce

Add to crock pot in that order. Turn on low. When chicken is done, remove and pull, then add back to crock pot. You can serve it soupy like this, or you can add a package of Mexican rice (the Lipton 5 minute rice) and cook for another 30 minutes. Serve with cheese, sour cream and guac.

I know office people love that soup. I don't, but mainly due to all the beans. I always scoop out the meat and broth if it's served and I need to eat it.
