Any good Canadian Bacon out there ?

Would like something smoked, only seeing a Land-O-Lakes brand in stores that looks less than desirable. Have found some whole pieces, not sure I want that quantity

There is really nothing to Canadian Bacon. I've bought a few brands and found no discernable difference. Just my two cents.

Easy to make. Begin with a pork loin (buy a half loin from the grocery).

(1) Make a cure
(2) Soak the loin in the cure for 6 days
(3) Remove from cure
(4) smoke until cooked

Cure:
1 gallon of water
1cup salt
1 cup sugar
2 tablespoons Prague powder #1
2 jars pickling spice

Mix well. You may need a second or third batch, depending on the size of your soaking container. You don’t need to add more picking spice to the second or third batch, unless you want.

Mix the cure and soak the loin in a container with the cure for 6 days or so. You can always inject it with the cure and cut the number of days to about 3.

Sam's has good CB. Great big packages. We bought a package 7 or 8 years back, robably in Meridian days. Had it every meal for a month or two. Almost died of CB overdose. Still get hives when I remember.

I am one of the very few Tigerdroppings residents who will claim to like Egg McMuffins. When they are purchased within the first twenty minutes of starting a trip to the beach, hot with crispy grilled muffins they are pretty good. A big cup of coffee to wash them down is nice too.

And the few times I’ve bought Canadian Bacon I threw most away. I only need a few pieces for whatever I have the envie for. As a coincidence, I got my kids Dominoes pizza tonight. Half cheese half pepperoni. They took that to mean half pepperoni and half Canadian Bacon. I ate a couple pieces of the bacon and it was mighty fine. Better than the pepperoni for sure.

Count me as one of the few as well. Egg McMuffins are one of my favorite breakfast foods to make at home, especially when the grand kids stay over.

Otis, don't you eat party ham slices or stuff like that. Honestly I can't tell a lot of difference between party ham and canadian bacon.

Just strange to me, but whatever.

Yep, MD. I like ham and I like bacon...but Canadians need to learn what bacon is. It isn't ham.

No, I don't at all, but I do find it funny when an easy recipe takes a week to make.

Dude just wants to buy some premade candadian bacon. He didn't ask to cure a pork loin.

I said easy, not fast.

OP never said he wasn’t interested in making his own. Since it’s a food board, I contributed the idea of making your own and included a recipe. Heaven forbid someone shares an idea and a recipe on the food board.

You mix 4 ingredients in water and put a half pork loin in the cure. You put it in the fridge for 6 days. Then you pull it out and cook it on a smoker or grill.

That’s what y’all consider complicated?

Homemade Canadian bacon is a very different animal than any store-bought I've ever found and well worth making at home. I think we use Ruhlman's recipe for it from his Charcuterie book.
