Jamison's boudin has a unique taste because he ads roux to the water and seasonings when cooking down the pork. It literally tastes like smothered pork, with a dark brown gravy and rice stuffed into casing.

Gonzo's in Luling. Only open Thursday and Friday. Makes his boudin from all the scraps and trimmings that fall off the cutting board as he chops brisket. It is amazzing.
