I am cooking some lamb chops that have been frozen since January, but it has “Sell By” date of February, not sell or freeze by.

Plus, the only Dijon mustard I found expired in June. I just lightly brushed them with it.

Both should be fine. Especially if the mustard was refrigerated.

I have been doing things like this all my life and I haven't died yet.

Most likely it was a "Best By" date which is for quality control because of all the emulsifiers and preservatives that are added. Mustard really never expires due to its acidic nature from vinegar being a main ingredient.

Yes.

Might as well enjoy the lamb.

I’m cooking a hunk of prime rib that was frozen last January. Not afraid.

Unfair question. Those who have died from this cannot respond.
