After The Boil Soup tonight

Boiled a sack of crawfish on Tuesday and wound up picking about 15 lbs. of the crawfish for the tail meat and fat to make the soup, along with a lot of what was in the boil as sides.

This is the 4th time I've made it and it is a huge hit in our house-------almost as popular as my crawfish bisque, but not quite, even though it is much easier to put together and can be done in a couple hours in one afternoon.

Gonna be eatin' good this Thursday night.

would love to see you soup and bisque recipes.

Unfortunately, the only crawfish I can get in Colorado at reasonable price is chinese tail meat, but I use it for crawfish monica and stuff like that. Really wish I could get American at a reasonable price, but the cheapest I've found is $9.99 a pound

What he said. I was in Rouses the other day smack in the middle of New Orleans and their price for La. crawfish tails was damn near $13 a lb., so $10 a lb. is a bargain.

sorry, I wasn't clear. That's $9.99 a pound for Louisiana cooked crawfish. Like peel and eat. No idea how much live cost, I don't have the space yet to do boils.

I pay $20 pound for Chinese tail meat

Yeah, that's a huge difference. To get 1 lb. of tail meat you would have to pick between 8-10 lbs. of boiled crawfish depending on their size. At that price, you're talking $80-$100 a lb. for La. cooked tail meat.

No way in hell I'd even consider paying that price for boiled crawfish. But that's how it is when you live so far away from the source.

Google "Cajun Ninja's After The Boil Soup" on U-Tube and that is the recipe I follow. It is a killer recipe.

To make bisque the proper way, you'd need cleaned crawfish heads to stuff, so just buying the meat would do you no good unless you just make crawfish balls and put that in the sauce.

My bisque recipe is very hands on and I use crawfish I boil and pick, heads I clean and my sauce is from scratch. I never measure things when I cook and go by what I know to be right from years of doing it. That way 5 gallons comes out the same as a gallons worth. Been cooking for 50 years now.

Have you tried ordering through Louisiana Crawfish?

I did pre-pandemic and it worked out great (Ohio).

I have to ask why you told buy Chinese crawfish at any price.
I would do without before I would eat/serve Chinese crawfish. I can’t understand people buying that stuff.

That is the recipe I follow to make the soup. Hell, I wish it was my original recipe, but I can't take credit for it, but it is a winner and something I look forward to making after my crawfish boils.

Last spring I boiled a 40 lb. sack extra to pick just to make ATB Soup and a large pot of Crawfish Bisque with the tail meat.
