Advice on seasoning fried fish when doing your own flour/cornmeal mix

Wife has celiacs so I can't buy the Louisiana mix anymore. Sometimes the store will have Zatarains that's GF. Usually I just mix King Arthur's GF flour with some cornmeal. I have no idea amount I use, I'm guessing 2-3 cups of each I pour in a container and then add salt, cayenne, pepper, garlic powder, and whatever else I want.

It's just very inconsistent. Wondering if anyone has any advice on maybe how much of whatever seasonings, especially salt, to add per cup of flour and or cornmeal. I'm good with everything else on frying fish. Just looking for some extra help on seasoning since I can no longer use the Louisiana fish fry and the Zatarains, when they do have GF, is usually not seasoned. I feed 6 people when I fry fish.

ETA: Thanks in advance since I'll be on and off and maybe not be able to respond some today.

i season the corn meal mix with slap ya mamma. i season the fillets with hot sauce and mustard.

Dip in Lousiana Hot Sauce, batter in Corn Flour, fry till they float, sprinkle with a little creole season right when they come out the grease.

First off, I'm not saying anything about you or your wife. I am genuinely curious where all the gluten allergies came from. I have never heard of it until 5 years ago, I'm 40. Seems like everyone is allergic to gluten now.



Did "they" recently start putting something in flour that some people's bodies don't agree with?

I have never heard a legit explanation for the spike in gluten allergic people. I feel like we need to flatten that curve.

For several years it seemed like she was always basically having the stomach flu. Gastro-Doctor did some blood work and said she has a strain or something for celiacs, I don't remember the term. He did a biopsy and a colonoscopy. Said the part of the small intestines he can see showed damage and biopsy came back, according to him full proof of celiacs. Far from a fatty but her favorite food was pizza and she likes beer so had to cut that out except for something like cauliflower pizza.

Only a handful of restaurants we can go to. They have to change their gloves, can't be cooked in same pot or fryer as anything wheat. A authentic mexican place, a steakhouse, and surprising a pizza joint where the owner's father has celiacs. They do a cauliflower crust and put on a clean pan and keep covered so no flour dust gets on it, just takes awhile. Pain in the arse for the restaurants except for the Mexican place b/c they use very little flour to begin with, we tip them all well. We also went from going out to eat once or twice a week to now about once, maybe sometimes twice a month. Trust me, it's still embarrassing for her. I couldn't get her to a restaurant for a solid year after her finding out.

No problem, she use to be a nurse and I’m a medic and we still didn’t know what the hell celiacs was. Looked at the doctor like he was crazy when he told us
