On a serious note, I make a smoked corn chowder once by smoking the cobbs after I stripped the kernels off and simmering them for a couple of hours.

Roasted vegetable Better than Bullion is the way to go.
Another possibility would be vegan Worcestershire sauce, which apparently does exist. I have no idea how it tastes, or where to find it, outside of Whole Foods.

Smoke mushrooms for the “meat” and smoke flavor.
