Billys in Opelousas and billys in Scott are the same, in theory. In practice, the Scott location has a better product IMO. When I get the boudin in Opelousas, it always seems to have high amounts of grissle. The Scott location does not.

I pulled in that Billy's gas station/hole in the wall myself to check for the Kartchner's address. It is basically across them there so I made a little u-turn and went to Kartchner's. It's s sort of rustic wooden camp looking store.

I could be wrong, but I thought all of Billy’s production came from one location and was distributed for retail at other locations.

Could be, but it certainly seems different. The stuff in Opelousas also seems to not be picked as tight.

Maybe it is all in my head.
