I can’t seem to remember the process I used last year... I know I started at 500 for 15 minutes and then turned it down to 300 or 325 for so long per pound. I don’t want to turn it off and let it sit in the oven for 2 hours.

Does anybody know the correct temp and minutes per pound to cook to rare/medium rare/medium? I can’t find it anywhere. TIA

I put my prime rib in the sous vide at 125 degrees after I took my thanksgiving turkey out of the oven. It should be ready by Christmas Eve.

I do a lot of SV and I honestly laughed hard the first four or five times I read this joke. This however is about the 150th time and it has really lost its humor.

Cook it low and slow. About 225 to 250.

Invest in a good meat thermometer and cook it until about 125-130. Don't worry about time weight formulas.

Reverse sear and then wrap in foil a towel and place in your cooler. Should be between 135-140. Perfect medium rare.

If I knew how to post pics on here from phone I cooked a 21 day aged prime rib last weekend. Worked out perfect

I did one last year, 15LB, rubbed it with salt pepper and garlic, let it sit on a rack uncovered in the frigpdge for two days. Did it the Test Kitchen way, 225 until 125 inside temp then 450 for 5-10 min to crisp up the bark. Great Med rare rare no grey.

Here is one way that works every single time.
375 for one hour, turn off oven, put it in at 10 AM , It will be at 115-119 at 6PM.

Turn oven back on for 30 min to 125. Let rest for 30 min. Used a remote temp gauge.

Cook to internal temperature rather than time.

Spicy Whataburger ketchup makes it fancier.
