Commander's, Brigtsen's, Clancy's, Peche, Toups.
Drinks at the Carousel Bar, French 75, Erin Rose, Pat O's, The Delachaise, Ale on Oak .
If I had friends come in town that had never been to New Orleans and we did all of that, I think they would consider it a successful trip.

My must have's for out of towners:
Drago's Chargrilled Oysters
Central Grocery Muffaletta
Parkway Poboy
And then choose one or two upscale places to eat.

Ale on Oak? That 'experience' can be replicated at any sterile airport bar around the country. Not sure what you see there.
Otherwise, a very solid list.

Day 1
Atchafalaya (breakfast)
Parkway
Clancy's
Day 2
Ruby Slipper (breakfast)
Commander's (lunch)
Mosca's
Ruby Slipper and Atchafalaya may be a lot of food for the morning. Could substitute Toast one of those days...nothing spectacular, and it's really hard to get a table without wait, but they have French Truck coffee and that's worth the wait, IMO.

I always like to throw in a serious locals joint--like Melba's (fried shrimp Poboy and a Dirty Banana daiquiri) or Sammys (roast beef) or similar joint.

Singleton's fits that to a tee. Saturdays, Viet and some of the best po-boys in town.
It really is a gem.

Two weeks ago, I brought some Texas friends to New Orleans for 4 days. We stayed at the Ritz and we did the following:
Day One
Lunch at Bourbon House (bourbon milk punch and raw oysters)
Dinner at Commander's (outstanding)
Day Two
Street Car down St. Charles to Camellia Grill for breakfast
Ice Cream at Creole Creamery on Magazine
Grilled Oysters and Milk Punch at Bourbon House for lunch
Drinks on the Columns front porch
Dinner at Tableau (outstanding)
Drinks at the Piano Bar at Pat O's
Day Three
Lunch at Casamento's (great oyster loaf)
Dinner at August (outstanding and really different food)
After dinner drinks at Davenport Lounge (at the Ritz) listening to Jeremy Davenport late on Friday evening
Day Four
Breakfast at Cafe Du Monde
Last oysters (grilled and raw) at Bourbon House
Fly home
Service and food were 5 star at all three dinner restaurants.
Great trip. Yes, we did eat oysters at Bourbon House 4 days in a row. My friends loved the milk punch and it was a ritual because of the oyster bar and the people. I am a college friend of Dickie Brennan and he made sure we had the royal blue ribbon treatment at Commander's and Tableau. The service, food and atmosphere at all three dinner restaurants was a 10+. My entire group said they had never eaten as well or had as good as service as we had. Great New Orleans experience.

I haven't heard many raves about Tableau or I've missed them here. What did y'all have?

Best meal I've ever had in my life was lunch on day at Cafe Degas

This has become my favorite fine dining. I highly recommend it.
Commanders is always a wise choice. It IS New Orleans.
Jacque Imo's is a very cool and unique place, and the food is excellent. It does have its fair share of haters on this board, but I am a big fan. I have brought many friends here from out of town, and every single one has loved it.
Galatoire's and Arnaud's are fantastic as well, and they are also very New Orleans.
Antoine's is the oldest restaurant, so that's always a good choice.
ETA: Just read this

Excellent call! If you want oysters, this is the place to go. That oyster loaf is the shite

Not NOLA food but Johnny Sanchez has the absolute best queso I've ever had in my life. It's thick and cheesy with chorizo in the bottom... incredible.
