Those huge leg quarters taste like arse anyway

Smaller ones are more tender, less stringy and taste better

Smoking one of mine Saturday and have it heavily seasoned sitting in the fridge right now.

I was going to wrap the other one and save it for later, but decided to cut it up and trim the silver skin and that nasty slick fat and I will make Andouille with it.

Both get smoked on Saturday. The pork butt in the bullet smoker and the sausage in my homemade smoker.

I just keep hoping they will sell out to Publix, purely so all the bottles of allocated bourbon they get will be for sale to the public and not all end up at Donny Rouse’s house. The amount of high end bourbon in circulation in Louisiana would skyrocket.

This has to be one of the strangest "conspiracy theories" out there. So you're saying one store owner, who gets his allocation of high end bourbon has caused a statewide shortage-------all on his own.

Never mind that there are hundreds of other supermarkets, liquor stores, specialty wine and spirits stores in the state to carry said high end liquor.

High end bourbon allocation is about total buying power from the distributor

Since Rouse's has over 50 stores in Louisiana alone, that gives them huge buying power and a larger than expected allocation of the top shelf stuff.

Well a quick check shows Winn-Dixie has 46 stores in La. so maybe he should check out their liquor department.

How many stores does Rouses have in Louisiana? 50-60? And they sell a shitload of liquor that is used to determine who gets the highly allocated bourbons that everyone wants. Do you think he gets more, or the 3 Hokus Pokus stores get more Pappy (to use the highest profile example)? There are probably close to as many Rouses in the Baton Rouge and New Orleans markets as all other retailers combined, yet we see the bottles from the other stores, generally in raffles, or otherwise sold to customers, his, never.

They periodically put a couple of bottles in his locked display cases of LotB or Old Rip at higher than Secondary prices and if someone is desperate enough to pay that, he gets huge profits. The PVW15, 20 and 23? Let me know when you see a bottle of that in any of his stores. I’ve heard from distributors and employees of his that all that gets delivered straight to him. Liquor managers in his stores never, ever see them.

Winn Dixie isn’t selling the product lines the other places are that are factored into who gets the highly allocated stuff.

Well, not being a bourbon drinker, I had to look those up and honestly, I have much more important things to spend my money on than a $2K+ fifth of bourbon, no matter how good they claim it is.

When I see folks buying stuff like that, it just convinces me some folks have more money than sense.

This was a pleasant surprise. Last weekend I picked up a 5 lb bag of Blue Runner(dry)red beans. I check the freezer at home and I'm low on sausage so I decided to take a ride to get some French Settlement smoked sausage. So Thursday I took a nice drive to the Rouse's in Gonzales that used to be a Leblanc's. So since the butts are on sale I decided to pick up a couple to make some pickle meat for beans seasoning. I get to the pork section and that Rouse's has their own butt sale thing going on for 79 cents a pound. Not only that but they also had some other meats on sale for what seemed a little cheaper than the stores in Metairie.
So if you're interested in those pork butts check out the store in Gonzales for .79 a lb.

Yeah - was coming to post that. Went to rouses this AM and it was .79lb for twin pack. Again, I'm stocked up but I did pick up a bag of leg quarters.

Cooking a chicken sauce piquant tonight.
