There's no question who the best team in the NFL was that year, and it wasn't the Giants.
Playoffs aren't the end all/be all. The eye test is real.
So you didn't answer the question directly as to what a "true champion" is. The inference I get from your argument is that the "true champion" is the team deemed best throughout the season rather than a team that wins a playoff game or tournament. By that logic we should not only eliminate the CFP but also not revert not the BCS but instead revert to the pre bowl game national championship voting so the "true champion" can be established via the eye test of the season.
By your logic, gymnastics and figure skating, generally considered the most subjective in determining winners, are the truest forms of athletics, in terms of selecting a champion because that is wholly decided by the eye test.
Personally, I prefer the champion to be determined on the field. Who is the best team will be debated by talking heads and fans regardless of the outcome of the game.
In 1980, the best hockey team in the Olympics was undoubtedly the USSR team but the gold medalist of the Olympics in Hockey was the USA team. But I guess they weren't "true champions".

In that example the Giants are the true champion but that doesn’t make them the best team. Most people want to believe the narrative that there is a true best team and they rise to the challenge. Sometimes there is 1 team that is clearly the best and wins the championship, the 1985 Bears, 1989 49ers for example and the 2007 Patriots looked like that but sometimes there’s an upset. The reality is most of time there are a handful of teams at the top and one will win.

Burrow wouldn't have a chance to beat the NCAA Single Season Passing TD record if not for the extra playoff game.

This year is perfect for a 4 team playoff. It is just like 2003 when USC got left out. Don’t know about you, but I would have loved to settle that debate on the field.
What if we beat OSU in a close game this year in a BCS championship and Clemson destroyed Oklahoma in the Orange or Fiesta? There would be plenty of people claiming that Clemson was the real champ especially as an undefeated defending champ.
No thanks...let’s find out who is the best.

Under the BCS an undefeated team would have been left out. Probably the defending Champs. This is the type of season the playoff was meant for and shows why 4, is the prefect #.
Depends on which iteration of the bcs we are talking about. Pre 2003 yes. Post 2003 where they upped the poll percentage and devalued computers-no.
IMO with this season the press wouldn’t let Clemson (defending champions, 29 straight etc.) get left out so they would manipulate at the end to get them where they needed i.e. flip them to 1 to make sure they at least end up (in post 2003 bcs) at 2. Between osu or Lsu for the other spot then it’s a toss up. The computers liked osu more

The the AP had Clemson at #4 before the playoff rankings came out and #3 after the LSU-Alabama game. In the final poll they had only 3 first place votes. However, The AP was not part of the later BCS, the coaches poll had them at 3 after LSU-Auburn, Ohio St moved ahead of them but not until after the playoff rankings came out. I suppose we can’t know for sure, but i see no reason to think Clemson would have been higher than 3 in the traditional polls.

Yes they did, that’s one reason why I find it so funny so many (angry)LSU fans are clamoring for a return to the old, pre 2004 BCS and computers over the committee
In any event a major undefeated team would have been let out the last 2 years, this year either the defending champs, or LSU/OSU who won the 2 best conferences and looked dominant most of the year. There is no way thats better. People like the OP are just saying that probably because they just hate the idea of the committee (never mind that all other college sports fill out their playoff by a committee) and lash out.

Question: will we ever see a "small school" make the final 4? Can a non-Power 5 team ever make the cut? How?
No. It wasn't designed with those schools in mind.

This year we definitely needed the playoff. You can't leave out any of the top 3
