Recipes for Tuna...

Offshore charter Saturday. Brought home two 90-100 pound Yellowfin Tuna and another one for 35-40 pounds and limited out on Snapper. As a result I have a large amount of Tuna Steaks.

What are your best recipes on the grill, pit, oven or skillet?

Mix onions, garlic, cilantro, diced tomatoes, lime juice, and some salt and pepper. Dice up some tuna and mix all together in a bowl and stick in the fridge. Eat it in 3 hours. Ceviche

Two questions:

1.) How small should the Tuna be cut into?
2.) The wife wants no part of raw fish. Any other recipes?

Take the small tail portions and hit them with salt, pepper and garlic powder. Smoke them skin side down to 140F. Cool in fridge overnight. Cube them up and make the best tuna salad you ever had

1. small, cut up pieces the size of dice
2. Tuna steaks that are cooked med/well, the problem is the steaks will be dry and tough

Lots of recipes via google images , tuna is best served raw or barely seared
Matches well with avocado and ponzu sauce

Blackened in a cast iron skillet
Grilled fast over high heat
Peppered tuna
Tuna salad (raw) served with diced mango , sprinkled sesame seeds, and watermelon vinegrette
Tuna tartar
Spicy tuna hand rolls

Alton Brown Sesame tuna

Awesome way to prepare the fish.

The ceviche, while not cooked with heat, does have its proteins cooked via acid.

If you freeze the tuna it will basically eliminate any chance of a bacteria harassing you.

You could also sell me a ton of it

1) bite sized little cubes
2) the fish will be cooked by the lime juice

Poke Salad is my favorite. Number of different ways and recipes to make it. Another poster linked a good recipe about a month back. I bet itd be easy to find using search function.

Stoked to hear that. I took home five gallon sized bags of Tuna Meat Slabs on ice. I sliced them up into steaks and/or smaller cubes and transferred them into a half-dozen smaller gallon sized freezer bags and then froze them.
