What kind of pussies are they targeting (or trying to turn people into)?
Half the commercials are "meat without meat", "beer without beer", etc.

No, they don't. You can thumbs down every ad you see and they will just show you whatever.
They originally started targeting ads that related to the video you are watching. They quickly changed to something with a whole lot less rhyme or reason.

Could be a multitude of things that has caused it to pinpoint those things. Could be your actual search, what you are watching, or maybe you share an account with someone.

I just got another ad for some type of milk alternative. I don't know if it was soy or almond or what, because I clicked off too fast.
Maybe they are targeting ads that are the opposite of certain users beliefs.
Half the recommended videos on my front page are always pro-COVID vaccination. But I'm unvaccinated and I've never watched one of these types of videos.

I would be surprised if they didn't. I see lots of commercials that are obviously geared directly to my watch history. For example I see a Pro's Closet ad multiple times a week because I watch lots of cycling content, and Powermatic and Jet ads because I watch lots of woodworking content. Whether OP likes it or not he watches content that has lots of views from people for whom plant based meat ads resonate.
The ad algo doesn't put in "opposite" opinion views like the recommended videos do. If you watch divisive content like political videos you do get opposite recs since it has been shown people overall watch content that makes them mad for longer periods of time. I don't watch that sort of content so all my ads can be reasonably connected to my view though some are clearly based simply on what socio-economic situation YT thinks I fit into.

I could see this. Someone watching Turning Point videos to get worked up would be no different that watching Turning Point videos because they agree with the lectures.
The ad algo doesn't really know the difference so it sends them ads for guns.

Yeah I have been noticing these lately and I don't even drink and don't Google meats so Idk if it's search history with YouTube.
