Thank you. It's keto and paleo friendly, too. Here it is:
INGREDIENTS
- 2 lbs raw shrimp, peeled & deveined
- 1 lb white fish of choice (I prefer halibut)
- 1/2 cup olive oil
- 1/2 cup onion, diced
- 2 clove garlic, minced
- 1/2 cup roasted red pepper, diced
- 1/2 cup fresh cilantro, chopped
- (2) 14 oz can diced tomatoes w/ chili’s
- 4 cups coconut milk
- 4 tbsp Sriracha hot sauce
- 4 tbsp fresh lime juice
- salt and pepper to taste
INSTRUCTIONS
Heat olive oil in a medium saucepan. Saute onions for several minutes until translucent, then add the garlic and peppers and cook for several minutes more. Add the tomatoes, shrimp and cilantro to the pan and simmer gently until the shrimp turns opaque. Pour in the coconut milk and Sriracha sauce (or Sambal Oelek), and cook just until heated through – do not boil. Add lime juice and season with salt and pepper to taste.
Serve hot, garnished with fresh cilantro.
This is a double recipe that will feed 10-12 people. I've made it several times for the 5 of us so just halve everything.

My usual Pandora stations when grilling on the patio.
My sons (we are empty nesters) when they come home, are not quite feeling it. So we hit up a little Jack Johnson, among other things....
