Never had them, but sounds great. I love the meat that comes from pork shanks. My favorite cut for white beans. Seems like these would be similar.

Never had them either but I came across this video a while back on how they're extracted then cooked. The video is a little long for some folks but the Bearded Butchers are great to watch if only for how ridiculously easy their knives cut through meat with a single swipe.

Had them years ago when processors were first promoting them. It was fun to cook tailgating, something fun and different. Other than that, there’s no point.

They are served at several places here in KC and they are delicious. Favorite I’ve had was at a place called Gram and Dun with an Asian soy glaze.

My butcher said he could get them, but only precooked....... Will try to find them somewhere.
