That’s because river rats aren’t usually cajuns, but more often descendants of German, creole, Italians, and canary islanders. There’s a few cajuns in Ascension, but they largely lost their accents and language due to being surrounded by islanos, germans, and anglos.
The big split among cajuns is between your prarie cajuns (acadiana) and bayou cajuns (houma/thibodaux).

I’m from Lafayette/Broussard, but my dad’s family is all from Lafourche/Terrebonne area.

I don't see a distinct dividing point, but enjoy both cuisines.

I don’t think there really is one - people like to make unnecessary divisions.
My grandma who was half Irish and half German made the best gumbo and daube - growing up in NOLA (and anywhere Cajun or creole) has its advantages

I used to eat Cajun down in fourchon a lot and that was the worst food ever.
Plain Spaghetti with fried shrimp or broiled oysters. Maybe some butter.
